Trick or Treat? Always Treat! – Monster Adult Coffee, Cinnamon & Chocolate Oat Puff Eyes

Booooo! Everyone loves Halloween, but not every Halloween treat actually looks AND tastes so so good. This is where my Monster Adult Coffee, Cinnamon & Chocolate Oat Puff Eyes come in. They are yum and very addictive. Their textures tick all the boxes: smooth dark chocolate meets crispy oat puffs and the warm cinnamon loves loves loves slightly bitter coffee. Can’t stop, won’t stop.

Monster Adult Coffee, Cinnamon & Chocolate Oat Puff Eyes

  • 150g dark chocolate (around 72 % chocolate), roughly chopped 
  • 140g coconut oil
  • 80g icing sugar
  • 1 tablespoon cocoa powder
  • 3 tablespoons espresso
  • 1 teaspoon vanilla extract
  • 1 pinch of sea salt
  • 2 pinches cinnamon 
  • 140g crisped oat (or rice) puff breakfast cereal

Decoration: 

  • green & red food colouring
  • 150 g marzipan 
  • dark chocolate drops
  • 100 g white chocolate 

In a bowl over simmering water, melt chocolate, icing sugar, coconut oil, cocoa powder, vanilla extract, espresso, sea salt, and cinnamon. In a mid-size bowl, mix oat puffs with the melted chocolate. 

Pour oat puff-chocolate mixture into an oven dish and let cool for 20 minutes. Shape about 30 little Coffee, Cinnamon & Chocolate Oat Puffs balls for the monster eyes. 

For the monster eyes, squeeze as much green food color as desired into 100g of marzipan and kneed until the color is equally distributed throughout. Take the remaining 50 g of marzipan and kneed in the red food colour. Roll the green marzipan into little balls, place on a cookie sheet, lined with parchment paper. Using your thumb, press down the green marzipan balls to form the green base for your monster eyes. Roll small pieces of the red marzipan into very thin and long lines, cut into 3-4 mm pieces to create to red veins on the monsters’ eyes.

In a microwave or in a bowl over simmering water, melt white chocolate. Put the white chocolate in a piping bag and pipe little irises onto parchment paper and press chocolate drops into the center of the white chocolate irises. Let cool. Glue the chocolate irises onto the green base using drops of your melted chocolate. 

Press as many red veins onto your monsters eyes. Using the leftover melted white chocolate, glue the complete monster eyes onto your oat puffs. Cool for 30 minutes in the fridge and enjoy. Can be stored in the fridge for up to 5-6 days. Enjoy! Booooooo!
