We are cherishing some of those last clementines over here while it snow-rains outside. For a little pick-me-up, I marinated some lovely clementines in olive oil, earthy rosemary, and sweet garlic & add some creamy burrata goodness with an olive oil drizzle & some freshly cracked black pepper & sea salt. Enjoy with a Glas of wine & fresh bread. Little could be better.
Rosemary Marinated Clementines & Burrata
Ingredients for 2 people:
- 2 clementines, peeled & separated
- 1 sprig of rosemary, leaves picked & chopped
- 1 small clove of garlic, minced
- 1 tablespoon lemon juice
- 2 tablespoon olive oil
- 1 burrata
- salt & pepper to taste
In a bowl, mix lemon juice, olive oil, rosemary, garlic, and clementines. Season with some salt & pepper and allow to marinated for about 30 minutes or up to 2 hours.
Arrange the marinated clementines on a plate and tear open the burrata. Enjoy with some wine & bread as a starter or small pick-me-up. I hope you love it.
